EASY GINGERBREAD RECIPE
INGREDIENTS
¼ cup golden syrup
¼ cup brown sugar
1 & ½ tablespoons ground ginger
1 teaspoon cinnamon
1 teaspoon baking soda
125 grams butter – chopped into cubes
1 egg
2 & ¼ cups plain flour
INSTRUCTIONS
- In a small heatproof bowl, combine the golden syrup, sugar and spices and place over a saucepan of boiling water. When the sugar has dissolved, stir through the bicarbonate soda and remove from the heat when the mixture begins to bubble.
- Transfer to a large bowl and stir through the chopped butter.
- Add the egg and 1 cup of sifted flour and stir with a knife to combine. Add the remaining flour and continue to mix with a butter knife until a dough forms.
- Turn the dough onto a floured bench and lightly knead until it’s smooth and soft. Divide into two halves and cover with cling wrap before popping into the fridge for 30 minutes.
- Preheat your oven to 180 degrees celsius (fan-forced) and line two trays with baking paper.
- Remove dough from the fridge and roll each portion between two sheets of baking paper until approximately 5mm thick. Use cutters of your choice to cut out shapes and place on baking trays. Bake for approximately 9 – 11 minutes – please note baking times will vary depending on the size of the cutter used.
- Allow the gingerbread to completely cool before decorating if you wish or transfer to an airtight container.
CINNAMON STAR CUTOUTS
INGREDIENTS
- 1 cup butter, softened
- 2 cups sugar
- 2 large eggs, room temperature
- 2 & 3/4 cups all-purpose flour
- 1/3 cup ground cinnamon
DIRECTIONS
- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Combine flour and cinnamon; gradually add to creamed mixture and mix well. Cover and refrigerate for 1 hour or until easy to handle.
- On a lightly floured surface, roll out to 1/4-in. thickness. Cut with a 2-1/2-in. star-shaped cookie cutter dipped in flour. Place 1 in. apart on ungreased baking sheets.
- Bake at 350° for 15-18 minutes or until edges are firm and bottoms of cookies are lightly browned. Remove to wire racks to cool.
CHRISTMAS BLISS BALLS
INGREDIENTS
2/3 cup ground almonds
1/2 cup cashew nut pieces
1/2 tablespoon water
1 cup cranberries
4 tablespoons coconut
2 tablespoons chia seeds
TO COAT
1 block of Whitakers white chocolate
Freeze dried raspberries or raspberry powder
DIRECTIONS
- Place all the ingredients in a food processor and process until all the ingredients come together. Roll into small balls and refrigerate.
- Melt the white chocolate over a low heat. Dip the balls in the white chocolate then into the raspberry powder.
NO-BAKE RAFFAELLO COCONUT BALLS
INGREDIENTS
- 1/3 cup (80 g) coconut butter
- 1/2 cup (42 g) shredded unsweetened coconut + more for rolling
- 2 tbsp (40 g) maple syrup
- Optional: 8 almonds
INSTRUCTIONS
- Put the melted coconut butter (you can melt it in a double boiler or in a microwave) into a bowl. Add maple syrup, the shredded unsweetened coconut, and stir with a spoon.
- Place the bowl in the freezer for about 5-10 minutes so that the mixture gets firmer. Then shape 8 coconut balls with your hands. You can also add one almond in the centre of each ball (optional).
- Finally, roll the coconut truffles in shredded unsweetened coconut and store them in the fridge. Enjoy!
NO BAKE CHOCOLATE CHRISTMAS SLICE
INGREDIENTS
- 250 grams Plain biscuit
- 50 grams butter melted
- 45grams desiccated coconut
- 2 tablespoon cocoa
- 390 grams tin of sweetened condensed milk
To Decorate
- 1 tablespoon coconut oil
- 360 grams white chocolate two blocks
- 100s and 1000s
- 145 grams pack of Christmas M&M’s
INSTRUCTIONS
- Line an 18 x 28cm slice tin with baking paper and set aside until needed.
- Finely crush the Biscuits, you can do this using the pulse function of a food processor or place them into a bag and using a rolling pin to crush. Transfer to a large bowl.
- Add the cocoa and desiccated coconut and stir to combine.
- Add the melted butter and sweetened condensed milk and mix until combined.
- Transfer the chocolate slice mixture to your prepared slice tin.
- Break the white chocolate into pieces and place it along with the coconut oil into a microwave safe bowl and cook for 30 seconds spurts until it’s just melted.
- Carefully pour the melted chocolate over your chocolate slice and then decorate with the M&M’s and sprinkles.
- Place the slice into the fridge for a minimum of 3 hours to firm before cutting into pieces.
EASY CHRISTMAS PUDDING
Ingredients
- 5 cups Mixed Dried Fruit
- 3 Eggs
- 1 cup Brown Sugar (firmly packed)
- 300 milliliters Sour Cream
- ¼ cups Plain Flour
- 1teaspoon Ground Nutmeg
- 1 teaspoon Baking Soda
Instructions
- Grease an oven-proof dish (1.75-litre/7-cup capacity), line base with a round of baking paper.
- Place mixed fruit into a large bowl, stir to separate fruit
- Beat eggs and sifted brown sugar in a small bowl with an electric mixer until thick and creamy. Add egg mixture to the mixed fruit then stir in the sour cream and sifted dry ingredients.
- Spoon pudding mixture into the prepared steamer. Place a 30cm x 40cm sheet of foil on bench, grease foil; top with a sheet of baking paper. Fold a 5cm pleat crossways through the center of both sheets.
- Place sheets, baking paper-side-down, over steamer, secure with lid or string. Make a handle with excess string. Crush surplus foil and baking paper firmly around rim to help form a good seal.
- Place the pudding in a large boiler with enough boiling water to come halfway up the side of steamer. Cover the boiler with a tight-fitting lid; steam for 5 hours. Replenish with boiling water as necessary to maintain boil and water level during cooking. Stand the pudding for 15 minutes before turning out. Cool.
- Wrap the pudding thoroughly in plastic wrap then place in an airtight container or freezer bag.
STRAWBERRY SNOWMAN
Ingredients
- 6 Strawberry
- 1 Banana
- Some Black Seasame Seeds
- 60g White Sugar
- 60mls Drinking Water
- 6 Toothpicks
INSTRUCTIONS
- Prepare all the ingredients you need to make the strawberry snowman. Choose 6 well-proportioned strawberries from fresh strawberries; choose 1 smooth banana; appropriate amount of black sesame seeds; prepare 60ml of drinking water and 60g of white sugar;
- Soak the strawberries in light salt water for a while, then take out and drain the water, peel off half of the bananas.
- Cut off the strawberry pedicles horizontally. After cutting, put the strawberry on the cutting board to keep it standing; then cut at the top 1/3 of the strawberry, and the cut surface should also be level. Make the strawberry little snowman’s hat on the top, and make the strawberry little snowman’s body on the bottom.
- Cut the banana into 6 evenly-sized segments from the middle part, and then remove the remaining outer skin.
- First put the strawberry snowman’s body on the chopping board, then take a piece of banana and put it on it to make the strawberry snowman’s head.
- Finally put on the strawberry little snowman hat.
- Take the little strawberry snowman and put it in your hand, and take two black sesame seeds as the snowman’s eyes.
- String them with sticks and put them on the shelf for later use. Is the made strawberry snowman cute?
- Add drinking water to the pot, pour the same amount of white sugar as the drinking water, and the ratio of water to sugar is 1:1.
- Slowly simmer on low heat, stirring with a wooden spoon, until the white sugar melts.
- After the white sugar is completely melted, there is no need to stir it. Wait until the syrup starts to bubble, from large bubbles to dense small bubbles, and then start stirring continuously with a spoon to prevent it from sticking to the pot.
- Boil until the syrup is thick enough to hang on the spoon, and put the spoon in cold water to crystallize quickly.
- The boiled syrup can’t be left for a long time. Quickly put the strawberry little snowman into the syrup and turn it twice, so that it is evenly covered with a layer of syrup clothes.
- The Strawberry Snowman is ready, just take it out and let it cool on the shelf.
HOMEMADE HOT CHOCOLATE MIX
INGREDIENTS
- 1 1/3 cup Sugar (granulated or powdered)
- 2/3 cup baking cocoa
- 1/2 cups powdered milk
- 1/8 teaspoon salt (optional)
INSTRUCTIONS
- Combine ingredients in a mason jar. Shake until everything is well combined.
- To make hot chocolate, add 1-2 tablespoons of homemade hot chocolate mix to hot water. Stir and enjoy!
SUMMER FRUIT PUNCH
INGREDIENTS
- 4cups of semi crushed ice
- 2cups diced seedless watermelon
- 1cup diced strawberries
- 2cups cranberry juice
- A squeeze of lime
- 4-5 fresh mint leaves in a jug
- Lemonade to taste
Combine all ingredients together. Top with lemonade to taste.
